Pumpkin spice mix

Pumpkin season is here! I'm so excited to try lots of new recipes with this orange veggie. But pumpkins are walking hand in hand with spice, mostly in sweet recipes. So now it is obvious that I will start my pumpkin season with my homemade pumpkin spice mix. I love this spice mix and I use it almost everywhere during the fall. Maybe this is the easiest recipe on the blog but I guess you will appreciate it a lot! :)

Almond mylk - homemade & super easy

Super easy way how to get really fresh and homemade almond mylk. Why I use Y ? Because it is no real animal milk. I know there is more than thousand same online recipes, but I simply want to have my own on the blog.

Vegan Mac & Cheese

Vegan Mac & Cheese? Without cheese? What's that? It was first idea which came in to my mind when I saw this title on the website. How it tastes alike? It was the second idea and after that I was completely sure I have to try it!

Almond rawtella

When I was tasting Prague with my friends, I tried sweet spread called "Datela". It was delicious and that's why I wanted to do it by myself. I did. And how it happend? I just wrote down ingredients which could be suitable, then I used my intuition for how much this and how much that and the result is .................. (try it and then fill the gap)!

Mango raspberry chia pudding

When my mother told me about chia seeds for the first time I didn't pay attention at all. Two years later chia seeds have become well-known all over the world. They call it superfood and it has lot of proven benefits for our healthy (you can read it more here). Normally, chia seeds has no taste and to make a pudding from them I found as the easiest way how to eat them. Chia pudding is a great breakfast because mostly it has already been prepared with no work during the night. And the best part? You can do it thousand different ways according your taste or pantry supplies.

Tasting Birmingham - Day 1

After tasting Prague, I visited my sis and my friend Elha in Birmingham to meet them and try some new traditional meals because I had never been in Great Britain before.

Pistachio Matcha Rawcake

When you are lactose and egg intolerant and you want to eat gluten-free, it is not easy to find a recipe for a suitable dessert. I'm glad there is a raw food and its recipes! I'm a big fan of pistachios and matcha too, so I went crazy when I saw this recipe on the websites :) It was so easy for me, because I usually have every needed ingredient in my fridge or pantry (I guess you don't but every ingredient written here is healthy and good for you so don't hesitate to buy them). As usually, I transform original recipe into my own recipe - I used more accurate units and ingredients I had at home in that moment. The result was more than tasty, it was delicious! Even my oldschool grandma with her boyfriend liked it very much! It is a proof you have to make an effort to get the special ingredients and make this cheesecake too :)

Tasting Prague

This post won't be about recipes but about the places I visited and meals I ate or shared with my friends during my holiday in Prague. So you can also read it as a review for foodie spots I was - most of them I can heartily recommend to visit and I am pretty sure I will visit them again. I visited Prague for a few days because my friend Clem from Paris arrived (also my friend´s Kamča French friends came too, so we were quite international group :) ) and I wanted to show her Prague a little and let her taste the best Czech food and beer - of course!

Chocolate chilli cheesacake

First thing when I arrived (I really don´t want to mention the duration of my exhausting and dreadful journey...grrr!) to Birmingham, my sister, she told me: "We need to bake something, my housemate is going to celebrate his birthday on Saturday!". So the plan for the rainy Friday morning was settled. Only question was, what should we bake? My sister bought a few packages of fresh full fat cheese, so we decided to bake a cheesecake, chocolate chilli cheesecake (my idea), because everyone who had ever tasted it, felt in love with it! When you are not a big fan of spicy things, just add little bit less chilli than we used.

First time I did chocolate chilli cheesecake couple years ago I followed recipe on the blog Chez Lucie, but its final form is changed and created by me. So if you want to pleased someone who loves spicy things, this cheesecake is perfect for it!

Sweet millet dumplings with strawberries

When I decided to remove almost all gluten from my meals I was looking for a classic flour replacement. In our organic store I found surprisingly a lot of gluten-free flours, for example millet, buckwheat, chick pea and amaranth. For this recipe I chose millet one, because millet is well known in our family for years. The real advantage of millet flour and hazelnuts is, that if you do these dumplings in advance or if you have leftovers, they won't get as hard as usual wheat dumplings. The other thing I hate about preparing wheat dumplings - dough is sooo sticky. Gluten-free, sticky-free :) And of course, hazelnuts make them much more tastier and unusual!

Coconut and raspberry cheesecake

Finally!
One of my favourites! Coconut cheesecake (read čískejk). This coconut and raspberry dessert with hint of lemon taste is kind of my sudden creation. Here it is kind of summer, well I'm in England so summer more feels like spring, and lots of fresh strawberries and raspberries are on rack in my favourite fruit shop.

Zucchini hummus

I really love hummus but I only had known classic chickpea hummus until I saw recipe for zucchini hummus on website rawfoodrecipes.com. There are at least three different recipes for raw zucchini hummus but I decided to follow my own chickpea hummus recipe and I only switched zucchini instead of chickpea and also amounts of each ingredients are little bit different. It's tasty, it's healthy, it's raw and it's lighter than classic chickpea hummus. And it perfectly matches with fresh zucchini for dipping!

If you have never ever ever eaten fresh zucchini you missed a lot! (Don't worry, I ate my first fresh zucchini month ago in Hungary - and I felt in love with it :) ) Do you know that it's crunchy? But you have to choose a small one, no longer than 20cm, hard and without any damages. Bigger ones start to be mealy and the middle it's not tasty at all. Try it, it is worth!

Daring Bakers Challenge - Charlotte Royale

Well, first question you are gonna probably ask is "what is the daring bakers challenge?"

Just to explain shortly. Daring bakers is website where people share different recipes from all around the world. Every month there is a challenge hosted by one of us. The challenge has to be completed within a month period and after  that we share our results. It is a amazing way how to try new recipes and discover tweaks and tricks for baking.

This month the challenge was hosted by Rebecca from BakeNQuilt.com. Our job was to make either Charlotte Royale or Russe.

I chose Charlotte Royale because it looked bit more interesting and challenging than Charlotte Russe. The Charlotte Royale is mostly made in a round bowl lined with slices of Swiss roll cake for a spiral effect.

I know it might seems like a bit tricky kind of dessert to make but it is much easier than it looks. Let's get started!

Vegan summer rolls

It was my first experience with rice paper and it was a really good experience. I guess I will repeat this recipe very often with a different filling. In the begining, I thought that I was making a raw summer rolls but tofu is not compatible with raw food unfortunately. So finally, it is not raw, but it is vegan, healthy and sooo tasty! Mainly the dipping sauce is incredible. I follow dip recipe from rawfoodrecipes.com, but I've changed it a little bit. If you do it for the first time like I did, don't be upset when your rolls won't be perfect - practise makes perfect! :)

Glutenfree banana pancakes

Today, I want to introduce my favorite breakfast far away for last months - it is really easy and tasty so don't hesitate to try it!

You can find banana pancakes recipes everywhere on internet, but I want to share my own improved one. The trick is that you add protein powder into the batter and your pancakes will be more compact and you can turn them easily to other side without tearing. And the protein powder adds them flavour so you won't be bored from always the same banana taste - my favorite is chocolate with peanut butter (yes, I am deeply in love with peanut butter - you can buy it here). So let's start!

Cocoa avocado pudding

Cocoa avocado pudding was one of the most surprising dessert I have ever made. Have you ever imagined or heard before, that you can prepare pudding from avocado? With the nearly same texture like real chocolate pudding has? No? But it is possible and the result is awesome!

Let's start it!

Why we decided to create and write this blog? At first, you have to know that we are really passionate about cooking, baking, cake decorating and also eating. Many friends ask us about the recipes we use, some of them actually "order" our goodies for their celebrations. Especially for me, blogging means way to share my "foodies" pictures without spamming someones facebook or instagram timeline :)

Why "from Birmingham through Trutnov to Wasserburg and back"? My sis now lives and works in Birmingham, but we are originally from Trutnov and most of our friends live there. And Wasserburg? I'm going to move there at the end of August. So we are very cosmopolitan and I think our cuisine too :)

My sis, she loves baking and cooking traditional worldwide recipes which she usually recreates during the cooking - when we baked and decorated cake for our friends and friends of them, I always reproached her, because if you do cakes for other people, they will expect always as the similar taste like before. And sometimes she forgot how much this and how much that she added to the mixture and her desserts, which were delicious by the way, could not be repeated. But for blogging this is totally perfect and I hope she will enjoy it! (And I also hope that she will make notes during her cooking next time) :)

So I guess you can expect here her recipes for pastries, pies, cakes, cookies and meals coming all around the world - classical but little bit modified and I'm not afraid to say improved!

For me, blogging means the way how to realize myself. I like to try new things in my kitchen and even more I love to share them with my friends - live at the dinning table or by utilizing social networks.

Couple months ago I discover totally different world of food I have never been interested in before and I fell in love with - vegetarian, vegan and raw. The most surprising thing was that those healthy recipes could be (and usually they do) even tastier that ordinary and classical recipes. It doesn't mean that now I eat and cook strictly according some of these "diet" ways - no, I only inclose them with enthusiasm to my life and make them special space in my menu. The reason is simple - it is something new and I could improvise and combine all new tastes. My cooking and baking is more precise than my sis's so that's why we will use for measuring mainly unit weight. (I even weigh water) :-D

I think thats quite enough for beginning, so stay tuned for another post!

K.

(Our english is not perfect. We apologise for our mistakes in advance, but we are trying hard O:-))

A proč "z Birminghamu přes Trutnov až do Wasserburgu a zpět"? Moje sestra v současné době žije a pracuje v Birminghamu, ale obě jsme původem z Trutnova, stejně jako většina našich přátel. A proč Wasserburg?

(Vážím dokonce i vodu) :-D

Myslím si, že tohle je na úvod víc než dost, takže si počkejte na další příspěvek!
